Food : Choose a masterwork...

The Hospices de Beaune were made out of pasta dough (20 kg) by Companion Cook des Devoirs unis Georges Bouché, “Bourguignon le Disciple de la Sainte-Baume”. The work was a prize-winning entry at the 1976 Frankfurt gastronomic competition.

The obelisk built on a columned temple is made from pastillage. This masterpiece was created in 1995 by Companion Pastry Cook du Devoir “Picard la Fidélité”. It contains numerous Guild symbols, in particular those specific to the Companion Bakers and Pastry Cooks du Devoir: crossed sticks, sheaves of wheat, labyrinth, set square and compasses, coats of arms of cayennes and names of corporations recognising the “Chiens blancs”. A butterfly – the only touch of colour – is set on the obelisk as a reminder of the ephemeral nature of alimentary creations.

The three eggs, made from pastillage and food colouring, are the work of Companion Confectioner des Devoirs unis “Berry le Désir de Bien Faire”. Created in 1998 to mark the museum’s thirtieth anniversary, they pay tribute to the guild system’s three legendary founders: Master Jacques, Solomon and Father Soubise.

This pasta-dough masterpiece is the work of “Bordelais la Constance”, Companion Cook des Devoirs unis, and was created in 2008 to mark the museum’s fortieth anniversary. It includes numerous allusions to the museum’s history, the dates of its conception and foundation, and its curators, along with such guild symbols as the faithful dog, the three founders, the chain uniting Companions, the stick, and the “Accolade” ceremony.
